Cooking Categories:
Backyard Variety, Shoulder, Backyard Bird, Fine Swine & More; Cooking Teams 

– Thursday: Contestants can enter the cooking area from 12:00 noon to 5:00 pm to unload and set up.
– Friday: Contestants can enter the cooking area from 8:00 am to 1:00 pm. Cook team meeting at 1:00 pm.
– Saturday Judging Times:
– Backyard Variety: 9:00 am
– Backyard Bird: 9:30 am
– Shoulder: 10:00 am
– Fine Swine: 10:30 am
– Ribs: 11:00 am
– Awards presentation will follow the tabulation of results .

What are the BBQ contest categories?
– Backyard Variety: Any variety of meat except ribs and shoulder (e.g., bologna, bratwurst).
– Backyard Bird: Whole or partial chicken cooked on a wood or charcoal fire.
– Pork Shoulder: Front leg containing the arm bone, shank bone, and a portion of the blade bone.
– Pork Ribs: Portions of a hog that include ribs, loin back, or spare ribs (country-style is not acceptable).
– Fine Swine: Tenderloin, ham, or pork without rib .

What are the entry requirements for the BBQ contest?
– Each contestant must supply their own meat, cooking ingredients, individual cooking devices, utensils, and preparation tables.
– Meat must be raw and unseasoned before the contest starts. No precooking, sauce injection, marination, or curing is allowed.
– Contestants must comply with all applicable health and safety regulations .

What are the BBQ contest rules and regulations?
– Alcoholic beverages must remain in the barbecue area in paper or plastic containers.
– Volume of music must be kept to a low “park level” after 12:00 am on Saturday.
– Open fires are allowed only for making coals for cooking and must be kept low.
– No motor vehicles are allowed inside any cooking site.
– Cleanliness and proper attire (aprons and hats) for cooks and assistants are required.
– No live animals are allowed in the cooking area.
– Violations of rules may result in disqualification or expulsion from the grounds .

What is the BBQ contest judging criteria?
– Judging will be conducted by secret ballot with blind judging for each category.
– Garnishments may be used for presentation but must fit into the provided containers.
– Each contestant must cook enough barbecue to provide samples to approximately 3-4 judges. Running out of barbecue before judging is completed will result in disqualification .

What are the entry fees for the BBQ contest?
– $50.00 for the first category and $30.00 for each additional category.
– Total cost to compete in all categories is $170.00 .

What are the awards for the BBQ contest?
– Grand Champion: $250 + Trophy
– 1st Place: $200 – $300 + Trophy (depending on category)
– 2nd Place: $100 – $200 (depending on category)
– 3rd Place: $75 – $100 (depending on category)
– 4th Place: Trophy .

Are there any special provisions for contestants?
– Electricity will be provided, but teams must supply their own extension cords.
– Cook teams with campers must bring their own generator.
– Tyson will provide chicken for teams interested in cooking for the community feed on Friday night, which begins at 5:00 pm .
